Sparkling Blanc NV

We have combined 3 different Chardonnay clones to add elegance and depth to this sparkling white wine. With a fine bead and a vivacious palate, we hope you love it as much as we do.

Blanc de Blancs typically express elegance and this wine is no exception. The palate is brisk and fresh, light brioche notes supporting an austere chalk driven mineral structure with a lively citrus texture.

Truly a wine for celebration, oysters, seafood platters and plenty of laughter.

Details

Colour: Light straw
Aroma: Bright and lifted with sweet talc, lemon butter and chalky minerality.
Palate: Elegant and lifted with distinct sherbet and citrus characters. Nougat and a savouriness sets this wine apart. A clean dry finish.

Wine Analysis: Alc/Vol 12.1%, Acidity 5.5 g/L, pH 3.07, RS < 1g/150ml glass
Serving Temperature: 6-8 °C

Wine Making

Vinification: Low pressure press to extract free run & chilled to allow solids to settle. Clears racked off & inoculated for primary ferment. Secondary tank ferment prior to bottling.

Vintage Conditions: A Goldilocks Vintage – not too wet or not too dry, with very even growing conditions. Minimal manipulation required with a long even ripening period. Favourable and dry conditions from January to late April, encouraged elegant fruit flavours to develop.

Stonefruit and pear flavours are the motor for this wine, though they are tempered by citrus and gently complexed by pastry-like notes. It works well.”
